A RECIPE.
Sift 6oz plain flour and a pinch salt into a basin, add 2 teaspoons castor sugar. Add i teaspoon castor sugar to \oz compressed yeast and stir until they liquefy. Add 1} gills lukewarm milk, previously scalded. Add this to a well-beaten egg, strain into flour, and beat until a smooth batter. Coyer well and put in a warm place to rise for 45 minutes. Melt a little lard or good dripping in a pan, pour in enough batter to make a small pancake, brown, then turn carefully, and brown the other side. Sprinkle with castor sugar and servo.
