A PLAIN CHRISTMAS CAKE. .To make a really economical cake take -Jib flour, lOoz butter, Goz castor sugar, two teaspoonfuls baking powder, 2oz each of currants, raisins, sultanas, and mixed peel, quarter-tenspoonful mixed spice, four eggs and two tablespoons milk. Line a tin with buttered paper. Beat the butter and sugar to a cream, add the well-whipped yolks of the eggs and heat until evenly mixed. Next Teat in the fruit, then the flour mixed with the spice and baking powder. Add the whipped whites of the eggs and the milk, and boat to a smooth batter. Turn into the prepared tin and bake in a moderate oven for about an hour. Strain off every leaf before putting tea in a vacuum flask, otherwise it will continue brewing, and the tea will be bitter.
