A RECIPE.
POTATO HEDGEHOGS. One cup mashed potatoes, blanched almonds, butter, a quarter cup grated cheese, one egg, breadcrumbs (dried), and a little milk or cream. Mash the potatoes with sufficient butter, milk or cream to make a stiff mixture. Beat in half the beaten egg and cheese. Allow the potatoes to become quite cold. Shape into tiny balls (size of a marble), and roll first in flour, then in beaten egg, then in fine sieved breadcrumbs. Prepare some almonds, shredding and frying till a golden brown in the butter. Drop the potato balls into deep hot fat, and cook quickly till a golden brown. Drain thoroughly and stick with the almond shreds. Grate a little more cheese over and serve immediately.
