DATE CHUTNEY.

One pound of 6toned dates, quarter of a pound of stoned raisins, quarter of a pound of onions or shallots, quarter of a pound of sugar, quarter of an ounce of garlic, quarter of an ounce of salt, six red chillies, a pint of vinegar. Chop the dates, raisins and onions finely, add the salt, sugar, girlie and chillies —the last tied up in muslin. Simmer till tender and quite thick. Remove the muslin bag and tie down while still hot if glass lids are to be used; if parchment, as for jam, the chutney must be allowed to cool.
