TO-DAY’S RECIPE
POTATO SURPRISES. Ingredients: One tin of sahnon or lib. seasoned fish, 3 large potatoes, 1 egg, | cup milk, 1 teaspoonful of butter, 1 cup of flour, pepper, breadcrumbs, tomatoes. Method: Boil the potatoes and mash with the butter, milk, salt and pepper. If using salmon drain the liquid from it and put aside. Take a small piece of the potato in well-floured hands, and press out flat. Pile on the fish and fold over like a roll. Roll in the flour and dip in egg and milk. Fry in deep, hot fat and serve with gravy made from the liquid of the salmon, fried tomato and garnish with parsley.
