Pickling Small Cucumbers Ingredients: loz. bruised ginger, |oz. whole black peppers, Joz. whole allspice, 4 eloves, 2 blades mace, a little horse radish, salt, water, vinegar, cucumbers. Method: Stand the cucumbers in salt and water for three or four days, then take them out, wipe perfectly dry and place in a stone jar. Boil sufficient vinegar to cover, with the, other ingredients (one quart of vinegar is the proportion to the given quantities) for IO minutes and pour over the cucumbers when quite boiling. Cover the jar with vine leaves and stand all night near the fire. Next day drain off the vinegar, boil again and pour over the cucumbers. Cover with fresh leaves and let all remain until quite cold. Then tie down closely to exclude all air and in a montn or two the cucumbers will be ready for use.
