HELPFUL HINTS
When the white of an egg, after being frothed, begins to separate, a few drops of lemon juice added will remedy the trouble. When straining liquids through a cloth, pin the cloth round the top of the receptacle with clothes-pegs. It makes the work easier and safeguards against scalding accidents. Before peeling oranges, cover them with boiling water and let them stand for five minutes. The bitter white lining will come off easily a£ a result. Greens, especially spinach and sprouts should be soaked for several hours in salt water before cooking. Salt toughens meat if added before it is done. Should vou. in opening it, break a jar or bottle containing liquid, fasten a piece of absorbant cotton over the end of a funnel and strain the liquid through it : the cotton will catch any tiny pieces of glass and make the Uqtud safe lor use.
