WHEAT CUT TOO GREEN
DOMINION TENDENCY. ADDRESS TO BAKERS. (By Telegraph —Press Asaociatloi..) PALMERSTON N. s Feb. 19. ■ In the course of an address to the conference of master bakers, Mr H. E. West, of the Wheat Research Institute, referred to the flour problems and factors causing variations, stating that the general tendency among millers was to cut wheat a little on the green side, the wheat, he considered, not being cut at the ' right period to get the best quality. Wheat grown a few miles from Palmerston North, particularly adjacent to the Feilding district, was of very good quality. That had been borne out in the bakehouse and in tests made.
