ADULTERATION OF MILK.

DAIRY SCIENTIST’S OPINION. During the proceedings of the first Dominion Conference of the newlyformed New Zealand Dairy Science Association (says the “Dominion”), which ha.s been held during the past week at the New Zealand Dairy Research Institute, Massey Agricultural College, there was a lengthy discussion on the control of 'adulteration in milk supplied to cheese factories. Special reference was made to the addition of water used for Hushing milking machines at the conclusion of milking. The subject was introduced by a paper by Mr Andrews, of the Dominion Laboratory, Wellington, on the detection of water in milk for city supplies.

At the conclusion of the discussion, the following resolution mas unanimously carried by the meeting: “That this meeting considers undesirable the addition of water used for flushing through milking machines, to the main bulk of milk. This practice may lead to the contamination of milk due to the use of polluted mater, and may also cause losses of fat and casein in the manufacture of cheese. The meeting, therefore, desires to emphasise the importance of enforcing that portion of the Act prohibiting this practice.”
