Green Tomato Chutney.—Take 81b of tomatoes, or 41b each of tomatoes and apples. Slice the tomatoes and sprinkle a little salt over them. Leave for a few hours, then add, 21b of onions (sliced thinly). 11b of brown sugar, jib of garlic, two small tablespoonfuls of salt, and one teaspoonful or more of cayenne. Cover with vinegar and boil slowly for four hours. A little bag of spices may be added, such as a few cloves, whole peppers, and two pieces of crushed ginger.

'Thatched Pie.—Have some vermicelli, cooked crayfish or any other fish, and' a good stock. Choose a piodish of tjie size required, and butter it well. Arrange a layer of vermicelli at the bottom and in lines standing up the sides. Fill the centre with the fish, well seasoned and flavored, and pack it so that ft may stand up above the sides of the dish. Fill in the spaces with a gravy that will set into a firm jelly when cold. Bake about one hour, then when set turn out. It makes a very pretty supper dish. Bake in a good oven for half an hour. _ To Bottle Tomatoes (for serving on toast or for soup).—Cut the tomatoes, put in a preserving pan, without water, add a little salt, and bring gently to the boil, and when summering well put into hot bottles. Sprinkle a pinch of salt and sugar on op of each bottle, and screw down tightly. These will keep for months, preserving all the flavor of freshly-cooked fruit. Date Sandwich.—Required: - 4 lb bullet, a small cup sugar, two eggs, two large teaspoonfuls of cream of tartar, one teaspoonful of soda. Method; Cream the butter and sugar, then add the eggs, then the dry ingredients. Roll out very thinly, a small piece at a time. Spread with dates and cover over. Cut into small squaies (about the size of a sandwich), and bake in a moderate oven.
