FROZEN POULTRY FOR EXPORT. TO THE EDITOR.

Sir — In your issue of the 14th of August I noticed a letter, dated London, from Mr. S. Lowe, Government Dairy Expert, who •writes that there is a good demand in the English markets for frozen ducks and chickens. As this is a question that would be of great benefit to small farmers, I think it should be brought forcibly under the notice of the present Government, who must have noticed with satisfaction the happy results in dairying matters ainco the appointment of an expert, etc. I might remind you that Lord Glasgow in opening the late Poultry Show at the Skating Rink referred to this question, and his remarks were supplemented by His Worship the Mayor. I think if the Government would only look into the matter and appoint an expert (as in other departments) who would give leotures and instruct farmers as to the best breeds to select, how to prepare them for export, etc., that poultry, though seeming only a small matter, would soon play a prominent part in the welfare of our small farmers. As showing the results that can be ahieved, I beg to enclose a Melbourne paper containing particulars of a shipment sent from there. The prices obtained show a good margin of profit after paying expenses ; and as England alone spends some four and a-half millions in poultry and eggs, I can see no reason why New Zealand should not have its share of the spoil.
