TO-DAY'S RECIPE
Pineapple Fritters Delicious fritters can be made with pineapple rings. Put the pineapple on a sieve to drain. Alake the batter by miving together a dessertspoonful of cantor sugar; ; a pinch of salt, and fbtfr ounces of’ self-raising flour. Add a beaten egg and enough milk to make a stiff batter. Beat in a dessertspoonful of melted butter. ' Have ready a pan of boiling fat. Dip the pineapple rings into the batter, and see that each one is thoroughly coated. Fry in the fat until golden' brown, then turn carefully with a fish-slice and brown tlie other side. Drain thoroughly ;on, tissue paper, put. on lace paper, and spriuklp with castor sugar.
