To-days Recipe EGGLESS FRUIT CAKE
Eight ounces butter or good dripping, Soz. each of currants, sultanas, and brown sugar; 4oz. raisins, loz. shelled almonds (blanched), loz. shelled walnuts, one teaspoon salt, one teaspoon mixed spice, half nutmeg (grated), three-quarters pint warm water, one teaspoon bicarbonate of soda, Jib. flour (good weight). Put butter, sugar, fruit, and nuts with the water in saucepan, and bring gradually to the boil, stirring all the time. Boil gently for five minutes, then leave till quite cold. SiCt flour with salt, spice, and nutmeg, and stir it, into the cold mixture. Lastly, add the bicarbonate of soda dissolved in one teaspoon of warm water. Turn into cake tin lined with well-but-tered paper, and bake in a moderate Oven for from two to two and a half hours.
