SUMMER DRINKS
Put one ounce of hops, three pounds of sugar, two ounces of whole ginger into four gallons of cold water. Boil for about twenty minutes in a large pan. . Strain. Before the liquid is quite cold and one ounce of goodyeast. Stir and leave overnight. Next day skim off the yeast. Bottle and cork well, but make sure there is no sediment in the bottles. It ought to be ready to drink in about a week or ten days.
Lemonade.
This is a good recipe for lemonade: Pare thinly six lemons. Put rind in a large basin. Next take off all pith of the fruit. Cut lemons into about four pieces Inch. Add one quart of boiling water into which one pound of lump sugar has been melted. Crush and squeeze all the juice from the lemons. Allow to stand overnight. Then strain.
One part of this essence to three parts of water in a tumbler is a good proportion.
