Cooking For ’68 ORANGE PIE

Now that short-crust pie shells are readily available in most food stores, it is easy to produce a delicious sweet very quickly. Try this Orange-Mallow Pie some time. It is simple to make and has a rich, fruity flavour. This recipe will fill one pie shell. You will need:— lib marshmallows (about 32) 1 cup orange juice 1 tablespoon lemon juice i cup chilled cream.

Method: Heat the chopped marshmallows with the fruit juices in the top of a double boiler over simmering water, stirring occasionally until the marshmallows are melted. Cool slightly and set In refrigerator until it becomes thick. Whip the cream until it piles up softly and blend into the manshmallow mixture. Pour in pie shell and decorate top with chopped nuts, cream rosettes or sprinkled jelly crystals. Chill until firm.
