Bread
Sir.—“ Rip Van Winkle” does not meet my criticism of government control of the flour and bread industries by miscalling it a tirade. He is. however, on rational ground again when he refers to the scientific and economic assistance provided the indus-
tries but is in error in ascribing this to the Wheat Committee and the department. The assistance has been that of the Wheat Research Institute, an organisation initiated jointly by the industries and the Department of Scientific and Industrial Research. The institute acts in an advisory capacity but according to the following excerpt from the evidence of its director before the committee of inquiry into the wheat flour and bread industries the potential of the institute has not been fully utilised by the Wheat Committee: “In my opinion officers of the Crop Research Division and the institute do not have sufficient opportunity to assist in formation of official opinion and policy.”— Yours, etc..
