Oysters
Sir.—lt would appear that our Bluff friends are going to use a considerable portion of their catch, when they get round to . catching, for the purpose of canning. Canned oysters bear little relation to oysters. While canning may bring extra profit to the Southland trade, it does deprive the New Zealand market of an all too limited product. The same thing applies to whitebait, but in this case the situation is worse. Tinned whitebait bears no resemblance to fresh whitebait. The sending overseas of this product is a disgrace to New Zealand. I have had overseas visitors who have been offered whitebait in my home and they have remarked that they have tasted the tinned product in the United Kingdom and do not wish ever tb taste it again.—Yours, etc., CRUSTACEAN.
