CHEAP FOOD BUT EXOTIC
New Recipe Book
“How the Poor Can Live." the title of a new recipe book which will appear later this year, will be a welcome kitchen addition for persons who live on a budget but enjoy exotic food. Written by Miss Valentina Gordienko and Mr Heath Joyce, the book will contain economical recipes collected from all parts of the world, with illustrations by the authors. An example is a meal with fish and potatoes as the basic ingredients, for about a shilling a person. For two persons, the recipe is as follows: into a buttered casserole dish, place two groper fillets and squeeze lemon juice over the fish. Add finely chopped chives, and a tablespoon of butter (melted) to which has been added a tablespoon of white wine. Cover the casserole, and bake in a medium oven for 20 minutes. While the fish is cooking, prepare the following potato mixture: finely slice five small new potatoes, soak for a moment in cold water, and dry in a towel. Into a small frying pan put a dessertspoon of butter and a dessertspoon of olive oil, and when the mixtuie is quite hot, add a layer of potatoes. Add a sprinkling of salt and a sprinkling of sweet basil, and repeat until the potatoes are used up. Turn down the heat, cover the pan, and in about 10 minutes toss the mixture (a galette) like a pancake. Turn the heat up slightly, and cook the galette till nicely browned on this side. The whole meal takes a little under half an hour to prepare and cook. For a touch of extravagance, add finely sliced mushrooms to the fish when it is about half cooked. Sole, placed on a bed of shallots, makes a delicious change from groper.
