RAINBOW JUBES.

(Sent in by D. Beams, 8, Coles Crescent, Papakura.) Ingredients: 3 dessertspoonfuls (3 oz) of gelatine, 1 cupful (| pint) water, 1 .cupful (Jib) sugar, juice of one lemon* colouring. Method; Mix gelatine, sugar and water togeiher. Boil for 20 minutes. Remove from fire and when cool add lemon juice. Divide into three parts. The first part colour red with, cochi- ! neal, the second part with yellow, and the thifd with green. Pour one part into greased tin. When set add second part, and when this sets add the third. Leave for 24 hours at least. Cut into squares and roll in icing sugar.
