i CREAMED SALMON ON TOAST l j Make sauce as follows: Melt c j 1 dessert-spoon of butter in an enamelled saucepan, add 1 des--1 I sertspoon of flour and teaf ! spoon of salt, and stir till well i j blended, stir over a very low > j fire for a minute cr two, don’t . j brown or let it burn. Add \ pint of milk and stir till it boils > I and’ thickens. Keep very hot. An enamel saucepan is not absoi j lutely necessary, but is nicer to . 1 use. I Have 1 tin of salmon opened ; j (red salmon is best, but pink | will do), take out the bones, , : and break fish up with a fork, i j Add it to the above sauce, also ! add some chopped parsley, salt, j pepper and little lemon juice i and mix well. Serve on hot l ! toast, with or without butter.
