SWEETS FOR DINNER.
FtriE/VFPLE SURPRISE. Bring J pint of milk to boiling point and stir In 2oz of semolina. Cook for a few minutes, pour into a basin, and add 4oz tinned or fresh pineapple cut Into thin slices, 4oz honey, 4oz breadcrumbs, the juice and finely chopped rind of half a lemon, one teaspoon ground ginger, 2oz butter and the yolks of 3 eggs. Mix well together, then beat the whites of the 3 eggs and lightly fold them in. Steam In a buttered mould for an hour, and serve on a hot dish with the sweetened syrup of tho pineapple. ORANQE MOULD. Dissolve ioz gelatine In J pint of water. Add the strained Juice of a lemon and an orange, and sugar to taste. Moisten a border mould, pour in the jelly, and allow to set. Whip half a pint of cream or make half a pint of thick custard, and add two tablespoons of castor sugar. When the jelly has been turned out on to a dish, arrange sponge fingers round the Inside and fill up with the cream or custard.
