GENERAL HINTS
Game should never be washed inside or out, merely wiped with a clean cloth slightly damped. The birds should be kept in shape by using string, when trussing them, not skewers. Birds which have been badly shot cannot hang for long; they soon become uneatable. To prevent the breasts of game becoming dry during cooking, tie a slice of fat bacon over each. As game lacks fat, keep it well basted, otherwise it will be dry and shrivelled. Fried potatoes should accompany game, also a tureen of gravy.
