RECIPES.
Luncheon Dish. Joint a fowl, and simmer with vegetables. Drain the pieces when tender, and when cold arrange round a large flat dish. Make a thick cream sauce, with some of the liquor and the diced vegetables, and pour over the chicken. Arrange borders of cold ham and sliced hard-boiled eggs round the edge, and All the centre with shredded lettuce. Tomato Savory. Stamp some slices of brown bread and butter into small rounds. Sprinkle with chopped parsley. Peel some tomatoes, and slice them with a sharp knife. Put one or two slices on each round of bread, sprinkle with salt and pepper and a little more parsley. Coat with mayonnaise sauce mixed with cream.
