FRUIT JUICE BEST. HOW TO MAKE THEM. Britain, revelling in yesterdays' warmth, grappled with the problem of the coolest drink. "Iced water is not the coolest," said a famous London chef to a Daily Mail reporter. "One of the coolest is cold tea. "Prepare some China tea is the ordinary wary and pour it into a tumbler full of crushed ice. Allow it to cool, add sugar and sip it through a straw. A cooling drink must be refreshing as well as cool; that is why a cup of hot lea actually brings a feeling of coolness after a few minutes." The best drinks of all for hot weather, however, are those prepared with natural fruit juices. Here are some recipes given by Mr Harry Craddock, manager of the cocktail bar at the Sovay Hotel— Summer Glory—Put the juice of two grapefruits in a glass one-third full of chopped ice. Add a cupful of cider, a cupful of orange juice and plerity of sugar. Add half a dozen grapes cut in half, a strawberry for appearance, and a dash of soda water. Silver Kiss—Put into a large tumbler three lumps of ice, the juice of a lemon, two spoonfuls of sugar, and the beaten white of an egg. Fill the glass with ginger beer, stir it well, and let it stand for five minutes. Cold Pussyfoot—The juice of half a lemon, half an orange, four crushed strawberries, a tablespoonful of grenadine, and pour into a glass with a lump or two of ice. Fill it up with sola water and add two sprays of green mint. The Nameless Drink—Another cool drink so far has no name, and is made with one-third of a glass of chopped ice and a small cupful of pineapple juice. Slice a peeled orange very finely and add the slices, two teaspoonfuls of sugar, and a splash of soda water. A teaspoonful of cream, gently dropped on top of th eorange slices will improve it, and the drink should stand for at least ten minutes. Sea Breeze Cooler—The juice of half a lemon, two dashes of grenadine, a little apricot brandy or gin to taste, a sprig of mint, and mix in a glass with cracked ice and soda water.
