MR C. DAY'S BACON FACTORY, TAMAHERE.

- The notice in our advertisement columns by MrC Day, re dairy fed pigs, brings before us again some of the advantages which such an establishment as the above undoubtedly confers upon snail settlers throughout the district. In the course of a recent visit to Pencarrow, we noticed that Mr Day has been obliged (owing to the steady growth of his bacon business), to erect new curing rooms. These are situated under the shade of tall trees, and, at the same time, arc fully exposed to westerly winds. Tho floors arc of concrete, with channels leading to the brine well. From this the brine is lifted and boiled over again, thus preventing what is, in many curing rooms, a source of considerable loss, Although, comparatively early in the season, the bacon factory is in full swing, and at the time of our visit, waggons from Patoraiigi, Whatawhata, and elsewhere were delivering their loads of fat pigs. To encourage the production of really choice pork, Mr Day gives au extra price for all pigs of a given weight and quality. This policy is undoubtedly a sound one, and its effect will be felt by the proprietor in the increased demand for the Tamahcre brand. In his own' styes, however, Mi Day has -about the best object lesson upon high quality bacon pigs, that his customers could desire. Separated into pens, holding half-a-dozen in each, are, or were about fifty prime bacooers,and as thoyatretched out upon tho clean wheateu straw, sleek, soft-skimmed, and all apparently of the same age and size, they furnished a picture well worth going some distance to sec. These pigs were fed upon milk and meal only, and it is therefore not surprising, that the product of a bacon-curor, who is so careful in his purchases, and in his own feeding, should bo eagerly sought after. About 700 pigs aro expected to pass through tho factory this season. THE DAIRY. Before leaving Pencarrow wo chanced to look into the new dairy, and a mora complete affair it would be almost impossiblo to couceivo, being, in fact, a modem butter factory on a small scale, Iu one room is an Alexandra separntor.capable of separating 100 gallons an hour; near to it. is a box churn such as are seen in the big factories, only, of course, smaller. Add to this a butter-worker and every convenienco for making and packiug butter, the whole being driven by a neat little vertical steam engine of some threo'liorse power. The dairy is under the management of ono of Mr Days' daughters, and in the matter of scrupulous cleanliness am) quality of butter, some of our factorymanagers might perhaps learn a point or two. A visit to Pencarrow is always ' pleasant and instructive, and, in view of ; tho energy and talent which Mr Day has j displayed iu dealing with dairying, bacon- j curing, and in the breeding of high-class ' live stock, all of which have so much to , do, uowa-days, with tho prosperity of those who have to live by the land, we arc not at all surprised to learn that lie is receiving many applications from parents who wish to place their sons' under his ; care, 1
