CHILLED BEEF

B ORTH WICK’S EXPERIMENT. Killing operations for the experimental shipment of chilled beef, to be dispatched by the Port Fairy from Wellington next Friday for England, concluded to-day at the Waingawa Works of Messrs Tlios. Borthwick and Sons, Ltd. Mr P. J. Borthwick, a director of the company, stated that it had now been definitely decided to include forequarters as well as hind-quarters in the shipment. He added that experts in London considered that hind-quarters would carry better if accompanied by fore-quarters. The shipment will now comprise 300 hind-quarters and an equal number of fore-quarters. Every precaution is being taken to ensure that only the very best quality beef will be shipped, and a number of quarters have been rejected. “The killing,” said Mr Borthwick yesterday, “is being carried out entirely by non-union men, and it is being done very well indeed. In fact,” jie added, “I have not seen better dressed beef in New Zealand.” . While full stress was laid on the fact that tlie shipment was purely in the nature of an experiment, Mr Borthwick spoke hopefully as to the outcome. They felt quite confident, he said, that the shipment would prove a success. Naturally, he pointed out, a great deal depended on the rates of freight charged by the shipping, companies, but he felt sure that a commercially workable basis of freight charges could be arranged. The increased charges w’ould account for some of the difference in the price obtained for chilled as compared with frozen beef. Even so, he thought th# returns would still be satisfactory. n On arrival at Home, the Port Fairy shipment will be taken straight to Smitliffeld from the docks, where it will be sold right away. “The quarters,” said Mr Borthwick, “cannot be held, and must go straight away, irrespective of what the price of the market might be.” The result of the enterprise of Messrs T. Borthwick and Sons will be watched with a good deal of interest by Dominion farmers.
