BUTTER AND CHEESE GRADINGS 1 The dairy produce grading figures for tho twelve months of the 1930-31 eea5 son ended July 31 make an eiriprcssive showing and establish a new production ’ record for the industry. Nearing the 190,000-ton mark, the butter and cheese graded during the season totalled 186,- ~ 260 tons, an increase of 3663 ton. as compared with the previous season. Butter at 97,031 tons shows an increase of 1687 tons, and cheese at 87,253 tons an increase of 1976 tons. The figures ■ represent an increase of 21 per cent in butterfat production. The Dairy Division of the Depart l meat of Agriculture reports that the ‘ salted butter graded for July, 193’1, was 1108 tons, and the unsalted J ton, ' a total of 1109 tons, compared with 745 ! tons salted and 9 tons unsalted, a total of 754 tons for July, 1930, an increase !of 47.082 per cent. For the twelve months ended July, J 931, tho respective ' quantities were: 93,425 tons and 3606 1 tons, a total of 97,031 tons, compare' with 73,734 tons and .1610 tons, a total of 95,344 tons for the corresponding 1 period of the preceding season, an increase of 1.769 per eent. ' The cheese graded for July, 1931, comprised: White. 209 tons; coloured, 180 tons. a. total of 389 tons, compared with 280 tons white and 311 tons col- \ oured, a total of 591 tons for July. *h.930, a decrease of 34,179 per cent.
