Boil one pound of loaf sugar in just under half a pint of water, until the mixture will form a ball. Take off the fire and stir in 12 ozs. of ground sweet almoniJw ami the lightly beaten whites of two eggs. Cook for a few minutes; remove again from lire, add sifted icing sugar, and work until smooth. Thc required amount of icing sugar varies, but usually about 4ozs. will be sufbcient. Colour the mixture and flavour as desired, form it into oval shapes and press half a peeled walnut on either side of each.

Now boil 31b. of loaf sugar, 1 gill iof water, 1 teaspoonful of lemon juice, and 3 drops of acetic acid, until a drop of the mixture becomes brittle in cobl water. Dip the walnuts quickly in this to give them a coating all over, and allow them to dry on an oiled plate.
