A NEW ZEALAND VISITOR

The New York Produce Review of the 20th August says: —

"William Dempster, a representative of the New Zealand Department of Agriculture, called at the Review office last* Wednesday during a visit to New York. Mr Dempster came to this country with a party of prominent New' Zealand dairymen and factory men to investigate methods applied to the dairy industry here, particularly as to the manufactureof milk by-products. He said that he found this country far in advance in the scientific investigational work, but in some particulars of practice he considered that New Zealand had progressed farther. Pasteurisation of milk for cheesemaking was, he said, a universal practice in New Zealand. Neutralisation of sour cream was general in the creameries. Cream qualities were much the same as he had found here.

"Mr Dempster was impressed, he said, by the cordiality of his recep tion in the dairying establishments here and by the willingness to impart information. He had some appreciative words for New York Produce Review.", of which he said he was a close and interested reader.

Mr Dempster leaves New York for England, where he will study marketing conditions and practice in the great markets where so much of his country's products are sold."
