Tim season of the year is now approaching when Urn dairy produce of Now Zealand will have to bo largely relied upon to supply the markets of this and tho adjoining colony, ami iu drawing the attention of onr friends to this fad, wo would take the opportunity of reminding them of the importance which attaches to careful packing, classing and preparation of their produce, Tho circular gives some important rules for lire [.reparation and Halting of butter. It paints out the necessity of securing entire freedom from buttermilk by s.illic>ent pressure. It deprecates air excess of salt, ami says that care should be taken that a package contains only one quality ami color of butter, and second class sorts should never bear exactly the same braird as lire best quality, even though they come from the same producer. Frequent and regular shipments are recommended in preference to holding butter until sufficient has been collected to make large consignments. The advent of large arrivals of foreign butter is usually the signal for local companies to reduce quotations iu order to, as far as possible, depress values of the imported article.
