AN excellent testimonial to New Zealand butter has been given by the medical eomespondent of the Times Trade Supplement in an article on keeping fit in February, the middle of which is, from the health point of view, the winter in Britain. "February is the month for good fines and good food; for the genial comfort of warm rooms and the sustenance of a rich diet; for winter clothes and winter habits," says the writer. " Good fires are placed first in the list advisedly, because the ' home fire' is our substitute for the sun. A fire is valuable not alone for the warmth which it gives, but also for the rays which it gives out. These rays, as can be shown, exert a definite influence on the human skin, which, in summer, is supplied by the light of the sun. Food, at this time of year, ought to be rich in fat. This is the time to eat meat and butter one's bread thickly. It is, moreover, better, in many ways, to use butter from New Zealand than butter from home farms becjause, at present, New Zealand butter is being made from cream produced in rich summer pastures, whereas English butter is being made from milk produced in cowsheds. Our home cattle are eating ' cake'; the cattle in the antipodes are eating sunny grass. At this time of year New Zealand butter is richer, far richer, in vitamin D (the sunlight vitamin) than English butter. Modccn methods of cold storage have made the problem of transport so simple that this carrying to and fro of ' frozen sunlight' is an easy matter. It is, of couree, possible now to add sunlight to butter, and a great many other foods, even in the depth of winter. Vitamin D has become available to anybody and everybody in its new form of irradiated ergosterol. But it may well be that the natural product is superior to the artificial."
