Wheat, Flour, and Bread.
It is beginning to dawn on the Flour Millers’ Association that the recent advances in the price of flour aggregating £1 10s per ton were premature. Milling wheat is quoted down South at a higher price than the same wheat would sell at in London with freight and insurance paid. For the first four months of the year the variation between the Sydney and Christchurch quotations was £1 a ton, £7 10s as against £8 10s. The Sydney quotation is now £8 1 Os, consequently the New Zealand quotations should be only £9 10s. The millers, desirous to raise the price of flour, needed excuse to do so. The excitement in the wheat pits of Chicago was seized upon, and before
it was known what real effect the gamble would have the price was raised 10s a ton, followed two days later by another 10s advance. This second advance gave the bakers a chance to raise the price of bread. The third advance of 10s is rather awkward for the bakers, and for that reason we may look for its removal in the course of a few days. That will not bring down the price of bread, but a decline of £1 per ton in flour will do it.
