Goose Which is Not Greasy

To-Dau’s Recipe.

Many people dislike goose be> cause it is greasy.

Cooked in the following way, an invalid can eat it without any bad effects.

Clean the goose and then pour boiling water over it and inside it. Wipe dry and stuff in usual way with sage and onions. Peel a lemon thinly, leaving as much of the white skin on as possible.

Place inside goose and skewer or sew up.

Rub a little lemon juice on outside of bird, flour and bake in moderate oven, allowing twenty minutes per pound and twenty minutes over. Baste well.

Remove lemon before dishing. It absorbs nearly all the excess of fat and gives a nice flavour to stuffing.
