Ingredients: Half a pint of dried green peas, One ounce of butter, A level tablespocnful of fWur, A pinch of dried mint, A clove, Two leeks, Salt and pepper. One onion, A quart of stock. One stick of celery. Soak the peas overnight, then boil them until tender. Strain and rub them through a sieve. Put them into a stew pan with stock, mint and the onion with the clove stuck in it. the leeks and celery finely chopped and a good sprinkling of salt and pepper. Simmer until the celery quite tender. Roll the butter in the flour, put it in and simmer ten minutes longer. Serve with fried sippets.
