TO-DAY’S RECIPE.
LEMON RUSKS. Sieve Mb flour, with a pinch of salt, 1 teaspoonful of cream of tartar, and h teaspoonful of bicarbonate of soda. Beat 4oz each of butter and castor sugar to a cream, and add 1 egg, beating it in well. Then stir in the flour gradually, adding a little milk if the mixture be too dry; it must, however, be dry enough to roll. Stir in the grated rind of a lemon, turn on to a floured board. Roll out about bn thick, stamp into small rounds, place these in a greased baking-tin, and bake golden brown in a good oven. They take 10 to 15 minutes to bake.
