TO-DAY’S RECIPE.
DELICIOUS EGG SALAD. One lettuce, two eggs, 2oz cream-cheese, loz butter, pepper and salt, beetroot for garnish. Melt butter in saucepan, break the eggs into it, add a very liberal seasoning of pepper and salt, and cook gently, stirring till it thickens. Take off the fire, turn into a bowl, and when it has cooled beat it with the cream-cheese until evenly mixed. Leave until quite cold. Wash lettuce, arrange it on a dish, put egg mixture in little heaps on it, and garnish it with strips of beetroot arranged in a lattice design.
