SCIENTIFIC DAIRYING.

— : & [By W. P. Hoard, Yv'ibcoxbin, U.S.A.] At the lifiid of the l',^> oi •■uppliers to my butter factory is a tinny ;armer named M'Phei.'siiii. Lost yesii" w« paid him in cash {',?, do-'ljii-F (.i!2 i;i: ) per lierni a.r< 'he earnings of his cows:' :n;ri v.o roiurr.ed l.sin his rki'.n uiill-:. lor Vfu-.h we would h«ve paid him ):'. uuLnvs (.£.\\Ss)pi-r In ad more, as an invostom'NV of our uto. Thiit wade his cows e;>.rn him 75 doi.'.-u-s (;SJ;j) per head in cash. Kow, -ay:- one ui:us, that was success. Certainly. Higlit alongside of him is another man, who had the same opportunity, with the same sky above him, the same earth beneath him, the same factor^ behind him, and the same market ahead of him, and we paid that man 40 dollars (£S) per cow. The first man had thirty-five cows, the last man had twenty. Where lay the difference of success? Was it in the heavens above or the earth beneath ? It lay in the brains and not in the hands. In other words, the first ; .man produced milk intelligently and made money; the second/ carelessly .and shiftlessly, and lost 35 dollars (.£7) -per head, or 750 dollars (.£150.) Now this is intensified, scientific, and successful dairying. These dairymen study their cows, they study their food to obtain the best results. They recognise the fact that the cow is a machine, and they carefully study that machine until they understand its peculiarities, its capabilities, its delicate sensitiveness, and then, intelligently and carefully they run the machine for all it is worth. These dairymen, and others whom I might mention, are all working along the advanced lines of which I have spoken. They are producing a large quantity of milk, and also reducing the cost of production to a minimum. They have learned that they cannot receive one penny of profit until they can produce • milk above the cost of production. In order to do this, they take the best care of their herds, give their cows the very best feed for this purjiose, and the result is a large increase and a large profit.
