Cookery.

p-NE of the branches of . technical education, and a highly important one, has received a stimulating impulse that bids, fair to be productive of lasting and highly beneficial results. The community has to thank the Chnstchurch Gas Company for taking advantage of the woman and. the hour, and arranging a series of public . demonstrations in cookery. When, according to Mr Punch, a tearful young housewife bemoaned to an experienced matron the irascibility of her husband, and besought advice, she received the laconic reply, "Feed the brute," which, after all, is only another way of saying that decent cookery is highly conducive to peace in the home. And then there is the economic aspect of the question. . Good cookery is synonymous with the avoidance i of waste, and the preparation of such food as shall be nutritious. It would have been a matter for much regret had the lady whose public demonstrations are winning { such high encomiums been suffered to depart at the end of the arranged course , of lectures. But Bhe is to remain, thanks to the wisely-directed energy of the Canterbury Wonten's Institute. Under the auspices of the Economio Section of this Association of women, cookery practice classes hare been arranged, with . the skilful Miss Wardrop as instructress, and , it only remains for the ladies of the community, and particularly the younger ones, to advance themselves, easily and pleasantly; in one of the pathways of knowledge.
