THREE MEANS OF USE One of the “old wives’ remedies” that can hold its own with modern medicine is lemon and honey, to relieve the “rough” throat that results from a rasping cough and a cold in the head. The remedy is very simply made by cutting a lemon into thin slices, dropping a thin layer of honey on each, placing the slices on top of one another, and leaving them for an hour or so to allow the lemon juice to be drawn into the honey. Pressure with the back of a spoon induces a greater flow of juice. Half a teaspoonful of the mixture will produce a wonderful effect in soothing and softening the sore tissues. In spite of its sweetness, honey does not possess the characteristics that make sugar undesirable in the food of people liable to adiposity and indigestion. It can be used in tea and coffee without spoiling the flavour and can also be put into puddings. Try it in the next milk pudding you make, and don’t forget a pinch of salt and bay leaf. When next you have sour milk to dispose of, remember that a cupful of it will work up into a very pleasant honey cake, if you mix it with half the quantity of sugar, dredge in twice the quantity of flour, and add sufficient honey to flavour the mixture. When it has been thoroughly stirred, add a pinch of carbonate of soda, beat again for five minutes and bake in a buttered tin for half an hour.
