TO-DAY’S RECIPE
BANANA LEMON MERINGUE j TART < Three bananas, 3-cup sugar, 3 •• level tablespoons flour, 3 level 3 tablespoons cornflour, J-teaspoon •• salt, IS-cups water, 1 tablespoon butter, juice and rind of 1 large •; lemon, 2 eggs, cold baked pastry shell. Mix dry ingredients. Add j water slowly and cook until thick •: stirring constantly. Stir a small *: amount of the hot mixture into 4 beaten egg yolks, and combine | with rest of mixture in the sauce- ♦; pan. Return to flame and cook *• 2or 3 minutes longer. Remove from stove and add lemon juice, < grated rind, and butter. Allow to *: cool, then pour over a layer of 4 sliced bananas arranged in cold baked tart shell. Top with a •: meringue made from 2 egg whites, i teaspoon baking powder, •: and 4 tablespoons sugar, beaten I; until stiff. Spread on tart and j place in slow oven for 23 minutes. |
