ORANGES AND LEMONS

Orangeade is a most refreshing drink when it is mixed with some lemon juice and grapefruit juice. To make more than a quart of the liquid two oranges are needed, one lemon, half a grapefruit, three pounds of preserving sugar, and a quart of boiling water.

Cut the oranges in half and rub them with the separate lumps of sugar. This draws out the best of the oranges and brings out the juice. As each lump is saturated put it in a large jug. When all the sugar has been used, squeeze out any juice that is left from the oranges, and add the lemon and grapefruit juice. Then pour the quart of boiling water over the juice. Strain through muslin, and put in the refrigerator to chill. This should be served in long glasses with ice cubes and thin slices of lemon.
