• SIMNAL CAKE • £ ilb butter, ilb sugar, 5 eggs, ♦ lOozs flour, Sib curamti i tea- * spoon each of nutmeg and mace, 2 ilb lemon peel, ilb cherries (if X liked). Beat butter and sugar to T a cream then add the eggs one £ at a time, then flour and fruit, ? For almond paste: Boz ground alX monds, lOoz castor sugar, almond ? essence, 2 eggs. Mix to a paste X and roll out. Put half the cake ? mixture in a tin, then a layer of X almond paste, then rest of the ? cake mixture on top. Bake n X a moderate oven. When cold, t put other half of almond mixX ture on top and Ice with a thin T layer of white icing.
