USEFUL HINTS
Dry in a clean cloth all food to be fried before it is coated with batter, or egg and breadcrumbs. This makes all the difference between good frying and messy frying. Cakes made with dripping have too distinct a flavour if mutton instead of beef dripping is used, also if a teaspoonful of lemon juice has been omitted. Make cakes with beef dripping and add the lemon juice, and no one would know that butter had not been used. Gelatine should always be melted in water. If dissolved in milk the milk may curdle. When cleaning material with benzine, a “water”mark is often left; this can be prevented if the material 1 is ironed under a damp cloth immediately the stain has been removed. Sink and outside drains should be flushed with at least a gallon of boiling water and soda every day in hot weather. To remove stains from dress materials rub lard well into the stain before washing it. Care should be taken when rubbing in the lard, or the colour of the material round the stuns may be damaged. Vegetables such as onions, carrots, and turnips will impart their flavour better and cook much more quickly when put into soup that is wanted in a hurry if they are grated into the stock instead of being cut in dice or slices in the usual way. Nail varnish which has thickened may be diluted with a drop or two of polish remover. If you find you have bought too dark a colour, get a bottle of the same make, but quite colourless. and mix them. Always buy the very smallest size in polish remover, since it evaporates quickly even when corked. When grilling fillets of fish place the cut side next to the flams*.
