BRAWN. Two knuckles of veal, lib pork, ' 3 sheep’s tongues, herbs, 1 teaspoon peppercorns and cloves. Boil the knuckles with half the cloves and peppercorns for about 3 hours. Save the liquid. Boil the pork, tongues and remainder of seasonings for about 3 hours. Skin the tongues, remove meat from knuckles. Cut up the meat, place in moulds and pour over them the strained veal liquid. Leave until set. Turn out and serve.
