fFBOM OUB RESIDENT AGENT.] Octobsr 4. — The new dairy factory was opened to - day, everything working ■ moothly, and the supply reaching 1800 gallons. There is every reason to anticipate a prosperous *eat>on. At Cardiff faotory there is a new hand at the helm as Chairman of Directors, Mr J. T. Belcher having succeeded Mr BaUe, who declined to stand again. The factory will run on butter uatil the end of February. Lowgarth ia one of the few factories making cheese this season, and will not unlikely afford an instance of the fcoundnes3 of the policy of going for the neglected article. The milk supply is expected to fiil all the vats. A t Ngaire, butter will be made so long as the comparatively small butter plant can cope with the milk supply, then of course a change will be made to cheese. The enterprising Midhirst Cooperative has leased the Pembroke Read factory aa a creamery, and there U talk of one to be built at the Skinner Eoad for the same Co. It will be interesting to note which gives the better results over a term of yeai«, Stratford with its large central factory and no creameries, or Midbirst with its small central factory and numerous creameries. On this question, as on many others connected with the dairy industry, experts agree to differ. One school prefers the large central gathering-place, where all the milk cornea under the personal supervision of tha highly trained manager and all the latest devices in machinery and apparatus are to be found, thus assuring the greatest possible excellence in the fnuahec pro duct.
