PIG FARMING IN FRANCE.
Fig farming in France continues to be very rsinnnerativo, and helps to increase the profits of tbe co-operative creameries. There are two classes of farmers in the industry — those who simply breed and sell the litters when only 8 or 10 weeks old, and those who fatten right off. There is no demmd for small pork in France, but tbe market for full sized pork and flesh is enormous. la the latter case, the flitch fat ia removed, salted, and sold like bacon. In this state it ia largely in demand for cooking accessories, and the poor patronise it largely, to boil with vegetables. The pork butchprß sell about 47 difforeot preparations from the pig.
