LEMON CREAMS. Crush a pound of icing sugar, and roll it till there are no lumps left. Break up the white of one egg and mix it with two dessartspoonsful of lemon juice. Sift the sugar gradually into this, stirring with a fork, then turn on to a board dusted with icing sugar and knead until a smooth paste is obtained, Add more lemon juice if necessary. If too thin, add more sugar. Roll the pastecut it into little caramel squares, and leave in a warm place to dry for several hours.
