SWEETMAKING CORNER

A PERSIAN SWEET. If you make this sweet and serve it at a party your friends will be surprised because they will not have tasted it before. You will require a quarter of a pound each of dried apricots, figs, stoned dates, stoneless raisins, stoned prunes, and nuts. Chop the nuts as finely as possible and put them, with all the fruit through the mincing machine. Mix well together and put through the machine again if the mixture is not quite fine, sugar and leave on a sieve in a warm place for a day or so to dry. Beat the mixture into a firm block about an inch thick through, then with a sharp knife cut it into squares like caramels. Dip the squares in castor These delicious sweets will keep a long time in a tin box, and they make a nice present.
