Cream-Cheese Fritters. Pound eight ounces of cream cheese till smooth, add salt, pepper, chopped onion, curry powder to taste, and about, half - a-pound of chopped cooked chicken. Mix well, whip two eggs, and add to cheese mixture. Drop the mixture, a tablespoonful at a time, into hot fat, and fry till golden brown on both sides. Drain and keep warm. Meanwhile slice some firm tomatoes, salt and pepper them, and grill lightly. When the cheese fritters are done, arrange them on a dish, garnish with olives, surround with the grilled tomatoes, and serve hot.
Cold Sweet for Supper Party ? Four eggs, one and a half pints milk, quarter-pint cream, eight drops Vanilla essence, one glass port, four apples, chopped walnuts, castor sugar. Peel and core the apples and arrange them in a fairly deep dish. Make a custard with the eggs and milk, flavour with the vanilla, sweeten with castor sugar, and add the port wine. Pour this . custard over the apples, and cook in a brisk oven for half to three-quarters <?f an hour, being careful not to let it boil. -Remove and allow to cool. Whip the cream to a stiff froth, spread it over the apple custard, and sprinkle thickly with chopped walnuts. Serve cold.
