BUTTER AND CHEESE. (To the Editor.) ■ Sil*,—One knows the depression that this country is going through, and there is only one way ollt of it, and that is there will have to be an alteration all roUnd, and it is. no good tho Labour leaders crying out that if tho wages go down they will fight the Government to the ditch. Where does that bouuceful talk come from, Moscow, or where? If Labour is going to be directed by that country, 1 say those who want it, let them go to Moscow and live. Our pticOs of produce are neatly below zero, and what Will happen if it still "goes down and the factories ate closed and the farmer lias got to take it aiid say ! nothing? Here is What it costs, or somewhere in the vicinity, to run a factory. Employing 22 hands ( at an average of £5 a Week, it runs into £llO a week, or £3720 a year. Then comes the manager, say, at £3OO, and the secretary at £250, and that will run out at £550. Then come the rates, carting, Storage, wharfage and freight, all to come. out of the butter and cheese,’ and if it is to be carried oh with expenses like these, where is the country going to? Then, there is another item, which I think is not warranted —the cream grader. Cream is graded into lots, and how many different churns have we got in. the factory? Some have one, two, three, perhaps more, and where does the different graded cream go ? In separate churns, or dumped in all together? There is only one lot of churning, and, if so, where does the grader come in. So I think the time has come when the butter and cheese making will have to be gone into and the expenses looked at, and it is no good saying that the country can stand it at the prices we are getting for our butter and cheese. —I am, etc., BUTTER-FAT. 1
